Pepper Mango Salad Demo, Perfect for Summer!




A zesty little salad from my last cookbook and one you've got to try for Summer! I was needing a little reminder that it is indeed actually summer and this one did the trick :) Refreshing, delicious and full of nutrients our bodies need this time of year. Hope you give it a try! This one also makes a splash at any gathering, might end up being the brightest dish on the table! :)


Pepper Mango Salad with Lime Dressing & Roasted Cashew

3 peppers finely sliced, 1 yellow, 1 orange, 1 red

1 or 2 ripe mangoes cut into cubes

1 cup lightly roasted cashews

½ red onion finely sliced

¼ cup or more of finely cut fresh parsley


Dressing

Juice from 1 fresh lime

2 tbsp. unpasteurized apple cider vinegar

¼ cup extra virgin olive oil

Pinch of sea salt

Place ingredients in jar (mason jars work great) and shake well. This will be more than enough but delicious and will keep a few weeks. Optional, add a few dried chili flakes for some extra kick!
