6 Weeks of Wellness, Week 6: Power Bowl Demo
Hello. hello!
So, here we are, officially my last food demo for this 6 Weeks of Wellness set. Hope you guys found something helpful :) I tried my best to pick tasty, nutritious and easy to make recipes for you all. I had some great encouragement a long the way (thank you!) and a whole whack of garden veggies to come so I will try my best to keep these little demos coming weekly. So for today's recipe, an oldie but goldie and showcasing one of my all time favorite green veggies, bok choy! Here I make a delicious Asian Choy salad and plate with some organic tempeh (LOOOVE Green Cuisine's tempeh! ) and a little quinoa, you can also sub for some brown basmati if you prefer.

Asian Choy Salad (For a Power Bowl)
4 large Choy leaves sliced, or 6-8 small ones
4 celery stalks sliced
2 cups grated carrots
1 bunch of green onions
Fresh chopped parsley and sesame seeds for garnish.
*Optional, add organic edamame (GMO free) or sauteed organic tofu or tempeh for protein. Turns this simple salad into a great little meal.
Dressing
Best to make a large jar ahead of time to allow the oil to soak up the garlic/ginger flavors. Still delicious fresh if you can't manage to make it in advance.
1/2 extra virgin olive oil
1/4 organic tamari
1/2 organic lemon juice
4 cloves grated or slivered fresh garlic
1-2 tbsp grated fresh organic ginger root
This dressing is amazing, great for rice, salads etc.
Add dressing to your salad and serve. This would be a great potluck dish as well. Veggies are firm and it will keep its crispiness for a long while. Enjoy!
